I still remember taking the catacombs path my first playthrough. you have a foggy forest, dark forest, castles, kingdoms tons of verticality and then the pure abyss. You have everyone's favourite swamp, you have lava, you have magical forest lake, dark prison, crystallized area. you really get to experience the detailed and varied environments of the game. That combined with infrequent load times and delayed teleporting. Just my personal opinion, but some of this is due to the numerous different legit paths throughout DS1, especially if taking the Master Key as the starting item. Cathedral of the Deep and Central Yharnam, for instance, are individually as big as say, 2.5 DaS1 levels and with more content. I don't think this is disputed much, besides with a few odds and ends from the earlier games(Latria, Boletaria, Painted World, Shulva etc). Conversely, the individual levels in Bloodborne and Dark Souls 3 are by a wide margin more complex in layout, and generally more varied in their encounters. Otherwise the levels are mostly kind of small(albeit dense, usually) and not all that varied within themselves. You'll notice the most complex and most interesting levels to traverse in DaS1 are either unconnected to the rest of the world or only connect in a linear, spoke-like fashion(such as Painted World and Sen's, respectively). That said, the complexity of the world design arguably sacrifices the complexity of individual levels.

That's not to say it isn't still awesome, as Bloodborne obviously does a great job at achieving visual consistency(other areas are constantly visible from one another) but DaS1 achieves that and creates meaningful and divergent paths from one area to another, hugely enriching the gameplay as well. In comparison Bloodborne has 2-3 connections between areas and they're not all that meaningful from anything but a lore perspective. Few other games have approached that level of cohesion and complexity in their world design at the same time. There's so many connections between areas and so many routes to any given location, it's insane. No question, Dark Souls 1 has by a wide margin the most complex and interestingly woven world design. I think it's important to make a distinction between individual level design and world design.
